You don't want to eat raw potatoes.

We cook potatoes for a couple of reasons: to eliminate the toxin solanine that causes nausea and headaches and to break down the complex starches that provide the actual nutrition.

I like to think of cooking as a secondary effect. Pre-digestion. 

As modern humans, we understand all the technical reasons why we eat cooked food. But that wasn't always true. We've been cooking our food for hundreds of thousands of years—not because we understood the reasons why, but because of a very simple feature.

It tastes better.

In the same vein, when something sounds better, we don't necessarily need to know why. Leave that to us engineering nerds.

Take, for example, AC regeneration. It doesn't require a set of golden ears to hear the immediate improvement between gear plugged into a Power Plant versus gear plugged into the raw AC.

Food tastes better cooked.

Gear sounds better with regulated AC power.

It's simple.
